So, ever since I have had a desk job in a cubicle, people have always asked me if I want to go out to lunch or where I am going for lunch that day. I never realized that people eat out so much until I entered corporate America. My dad packed my lunch for me all the time when I was little and I guess it just stuck with me.
Sundays are grocery and lunch prep days for me. I will make a list of meals I want for the entire week (breakfast, lunch, and dinner) and then I will make a grocery list from that. I do shop at Wal-Mart (insert Alabama joke here), but they have the Savings Catcher-which means no coupon clipping for me! I can just scan my receipt when I get home and three days later I get anywhere from 25 cents to $3 back! Last month I had racked up about $30 and used it towards buying more groceries!
Anyways, I decided that this week I wanted to make this meatball recipe that I had found online-thank you Pinterest. I followed it, except for I didn't actually make meatballs, I just kind of browned the turkey meat and I will add rice to it when I eat it for lunch. You can find the recipe here.
Basically after I make it, I will weigh the meat with an digital scale and put it in the plastic containers. I usually do about 4 oz. per day. I don't know where I came up with that number, but it fills me up, so I just stick to it. I buy individual cups of brown rice and cook them at work in the microwave. I also added some carrots on the side because I had some leftover.
I'm not a huge fan of these containers, but our nice ones are still packed in a box somewhere that we have yet to unpack from our 3 house move in the past 6 months. I will link some nicer containers here and here for you.
